My first reaction: \u201cI feel like I&#8217;m eating couscous.\u201d\u00a0<\/b><\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Since I had played it safe at first with the uncomplicated \u2018<a href=\"http:\/\/www.absinthes.com\/product_info.php?products_id=57\" target=\"_blank\">Fran\u00e7ois Guy<\/a>\u2019, the spicy notes of the \u2018<i>Libertine Originale\u2019<\/i> took me by surprise. Yet, the green fairy wasn&#8217;t the cause of my absurd couscous comparison; like everyone else, I didn&#8217;t know much about <a href=\"http:\/\/www.absintheclassics.com\/faq_absinthe.php\" target=\"_blank\">absinthe<\/a>. The Absinthe Salon and its Swiss-French absinthes with couscous and flower aromas, however, would teach me better.<\/span><\/p>\n<address class=\"p4\"><span style=\"color: #d10a26;\"><a href=\"https:\/\/theproject.com.au\/myfrenchlife\/2014\/09\/11\/labsinthe-salon-de-sydney\/\" target=\"_blank\">Cliquez ici<\/a> pour lire cet article en fran\u00e7ais.\u00a0<\/span><\/address>\n<h3 class=\"p4\"><span class=\"s1\" style=\"color: #d10a26;\">A road-trip to the French distilleries<\/span><\/h3>\n<p class=\"p4\"><span class=\"s1\">The Absinthe Salon, found in the heart of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Surry_Hills,_New_South_Wales\" target=\"_blank\"><span class=\"s2\">Surry Hills<\/span><\/a>, results from a passion for absinthe cultivated with an expert hand by Gaye Valttila and her partner Joop van Heusden.<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">For Gaye, this passion, not only for the spirit in itself but also for \u201cits wealth of history\u201d, finds its origin in cinema. \u201cIn &#8216;<span class=\"s3\"><a href=\"https:\/\/www.youtube.com\/watch?v=O57Wow3QeuM\" target=\"_blank\">Dracula<\/a>&#8216;<\/span>, there is a very beautiful absinthe scene, with the proper antiques, the proper method.\u201d\u00b9<\/span><\/p>\n<p class=\"p4\"><a href=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/C\u00e9cile_Mazurier_-_theproject.com.au\/myfrenchlife_-_02-08-14_-_5.jpg\"><img decoding=\"async\" class=\"lazyload aligncenter  wp-image-75582\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27563%27%20height%3D%27374%27%20viewBox%3D%270%200%20563%20374%27%3E%3Crect%20width%3D%27563%27%20height%3D%27374%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/C\u00e9cile_Mazurier_-_theproject.com.au\/myfrenchlife_-_02-08-14_-_5.jpg\" alt=\"MyFrenchLife\u2122 \u2013 Absinthe\" width=\"563\" height=\"374\" \/><\/a><\/p>\n<p class=\"p4\"><span class=\"s1\">The adventure began in 2001. While working in advertising in Holland, Gaye and Joop heard about the lift of the ban for absinthe-making in France. \u201cWe just put the dogs in the car and went to France and Switzerland on an absinthe distillery crawl.\u201d Their first stop was the <a href=\"http:\/\/www.lemercier.com\/\" target=\"_blank\">Lemercier<\/a> distillery in Fougerolles, Franche-Comt\u00e9.<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">In Sydney in 2005, Gaye and Joop brought with them a bottle of Lemercier 45 and another of Lemercier 75. They started by distributing the Lemercier absinthes, adding new brands to their portfolio, little by little.<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">In 2009, thanks to the new <a href=\"http:\/\/www.parliament.nsw.gov.au\/Prod\/parlment\/hansart.nsf\/V3Key\/LA20070927006\" target=\"_blank\">Small Bars Bill<\/a> facilitating the development of small bars in New South Wales, they opened the Absinthe Salon. Now offering 32 different absinthes, Gaye believes they \u201cwere at the right place at the right time\u201d.<\/span><\/p>\n<h3 class=\"p4\"><span class=\"s1\" style=\"color: #d10a26;\">The absinthe ritual, demystified<\/span><\/h3>\n<p class=\"p4\"><span class=\"s1\"><a href=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/C\u00e9cile_Mazurier_-_theproject.com.au\/myfrenchlife_-_02-08-14_-_2.jpg\"><img decoding=\"async\" class=\"lazyload alignleft  wp-image-75583\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27157%27%20height%3D%27228%27%20viewBox%3D%270%200%20157%20228%27%3E%3Crect%20width%3D%27157%27%20height%3D%27228%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/C\u00e9cile_Mazurier_-_theproject.com.au\/myfrenchlife_-_02-08-14_-_2.jpg\" alt=\"MyFrenchLife\u2122 \u2013 Absinthe\" width=\"157\" height=\"228\" \/><\/a>Back again on a Wednesday, I chose the \u2018Reverie\u2019 from the <a href=\"http:\/\/www.distillerybotanica.com\/\" target=\"_blank\">Distillery Botanica<\/a><b>\u00a0<\/b> &#8211; the only Australian absinthe on the menu and one of Gaye&#8217;s favourites. \u201cIt beats some of the French ones,\u201d she confided.<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">While the water dripped, the fragrance of the absinthe slowly released and filled the room with notes of fennel and green anise. The liqueur became clouded and freed the green fairy. This opalescence effect, called the <i>louche<\/i>, is the result of the absinthe preparation ritual, many times depicted in pop culture with reasonable exactitude.<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">The correct preparation takes place as follows: a sugar cube is placed on a slotted spoon on top of the glass filled with a measure of absinthe. Ice-cold water is then poured very slowly over the sugar, without any pyrotechnical effect \u2013 the flaming\u00a0sugar cube is 100% marketing and a <a href=\"http:\/\/en.wikipedia.org\/wiki\/Bohemian-style_absinth\" target=\"_blank\">heresy witnessed<\/a> for the first time in the late 90s in a bar in Prague. Surprisingly, the sugar is\u00a0 not compulsory; it is just a matter of taste.<\/span><\/p>\n<h3 class=\"p4\"><span class=\"s1\" style=\"color: #d10a26;\">The vocation of the Absinthe Salon<\/span><\/h3>\n<p class=\"p4\"><span class=\"s1\">Fascinated by the enigmatic and misunderstood side of absinthe, whose reputation has been distorted by decades of <a href=\"https:\/\/theproject.com.au\/myfrenchlife\/2013\/02\/07\/the-best-of-french-in-chicago-a-sip-of-history-intrigue-with-lucid-absinthe\/\" target=\"_blank\"><span class=\"s2\">prohibition<\/span><\/a> and urban legends, Gaye got into this adventure with Joop for this exact reason: educating and encouraging people, teaching them how to appreciate this <i>ap\u00e9ritif <\/i>and spreading it through Australia.<\/span><\/p>\n<p class=\"p4\"><a href=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/C\u00e9cile_Mazurier_-_theproject.com.au\/myfrenchlife_-_02-08-14_-_4.jpg\"><img decoding=\"async\" class=\"lazyload aligncenter wp-image-75581\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27570%27%20height%3D%27465%27%20viewBox%3D%270%200%20570%20465%27%3E%3Crect%20width%3D%27570%27%20height%3D%27465%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/C\u00e9cile_Mazurier_-_theproject.com.au\/myfrenchlife_-_02-08-14_-_4.jpg\" alt=\"MyFrenchLife\u2122 - Absinthe - Superieur\" width=\"570\" height=\"465\" \/><\/a><\/p>\n<p class=\"p4\"><span class=\"s1\">Absinthe tasting \u201cbecomes a social experience and about the ritual.
