Once a mosquito infested bog, the\u00a0<a href=\"http:\/\/en.wikipedia.org\/wiki\/Kitchen_garden\" target=\"_blank\"><em>potager<\/em><\/a>\u00a0is now a national treasure.<\/strong><\/p>\n<p>When the French <a href=\"http:\/\/en.wikipedia.org\/wiki\/Louis_XIV_of_France\" target=\"_blank\">King Louis XIV<\/a> moved his court to the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Palace_of_Versailles\" target=\"_blank\">Chateau de Versailles<\/a>\u00a0in 1682, the kitchen garden in the grounds was too small to satisfy the <strong>legendary<\/strong> appetite of the King and his court, where there were often several thousand people to feed.<\/p>\n<p>The King commissioned Jean Baptiste la Quintinye, a court lawyer, to create the <a href=\"http:\/\/www.potager-du-roi.fr\" target=\"_blank\"><i>Potager du Roi<\/i> <\/a>on the site of a mosquito infested bog, behind the <strong>famous chateau<\/strong>. It took more than five years to drain away the stagnant water and bring in rich fertile soil from the <a href=\"http:\/\/www.versailles-tourisme.com\/en\/discoveries\/tours-and-places-to-explore\/forest-of-versailles-green-belt.html\" target=\"_blank\">Satory forest<\/a> nearby to make the site fit for use.<\/p>\n<h2>A French-style vegetable garden<\/h2>\n<p>La Quintinye fell in love with gardening during a trip to Italy, so with the creation of the\u00a0<i>potager<\/i>\u00a0he was able to indulge this new <strong>passion<\/strong> by creating the nine hectors of geometrically laid-out gardens in the French style, complete with a central fountain.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/2013\/07\/P1020969_edited-1.jpg\"><img decoding=\"async\" class=\"lazyload size-full wp-image-64143 aligncenter\" alt=\"The central fountain\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27800%27%20height%3D%27552%27%20viewBox%3D%270%200%20800%20552%27%3E%3Crect%20width%3D%27800%27%20height%3D%27552%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/2013\/07\/P1020969_edited-1.jpg\" width=\"800\" height=\"552\" \/><\/a><\/p>\n<h2>The first greenhouses in France<\/h2>\n<p>The garden is divided by terraces and walls to create microclimates, making the <em>potager<\/em> one of the first sites of <strong>experimental <\/strong>horticulture.<\/p>\n<p>La Quintinye invented the first greenhouses in France and succeeded in growing Mediterranean <strong>delicacies<\/strong>, as well as the more mundane vegetables of northern climates.<\/p>\n<p>The court ate strawberries in January, asparagus in February, artichokes and peas, but also figs and melons, the King&#8217;s favourite foods. The fruit trees are still pruned as they would have been by the King and some of the 17th-century varieties are still growing in the garden, such as <a href=\"http:\/\/www.britannica.com\/EBchecked\/topic\/445691\/Passe-Crassane\" target=\"_blank\">Passe Crassane<\/a>\u00a0and\u00a0<a href=\"http:\/\/www.bbc.co.uk\/gardening\/plants\/plant_finder\/plant_pages\/10596.shtml\" target=\"_blank\">Doyenne du Comice<\/a> pears and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Calville_Blanc_d'hiver\" target=\"_blank\">Calville<\/a> apples, which were used in the original recipe for <a href=\"http:\/\/en.wikipedia.org\/wiki\/Tarte_Tatin\" target=\"_blank\"><em>tarte Tatin<\/em><\/a>, and is now quite a rare variety.<\/p>\n<p style=\"text-align: center;\">\u00a0<a href=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/2013\/07\/P1020978_edited-1.jpg\"><img decoding=\"async\" class=\"lazyload aligncenter\" alt=\"Passe Crassane Apples\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27800%27%20height%3D%27569%27%20viewBox%3D%270%200%20800%20569%27%3E%3Crect%20width%3D%27800%27%20height%3D%27569%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/2013\/07\/P1020978_edited-1.jpg\" width=\"800\" height=\"569\" \/><\/a><\/p>\n<p>While surviving the vagaries of French history, the garden has not always found favour. In the 19th century it was <strong>threatened<\/strong> by plans for a railway line, but is now a protected monument.<\/p>\n<h2>The\u00a0French\u00a0National School of Landscaping<\/h2>\n<p>The garden is run by the\u00a0<a href=\"http:\/\/en.wikipedia.org\/wiki\/L'%C3%89cole_Nationale_Sup%C3%A9rieure_d'Horticulture\" target=\"_blank\"><i>Ecole Nationale d\u2019Horticulture<\/i><\/a>, the French National School of Landscaping, whose students work and learn whilst maintaining the garden and the <em>potager\u00a0<\/em>has been <strong>awarded<\/strong> the accolade of\u00a0<i><a href=\"http:\/\/www.sitesremarquablesdugout.com\/tourisme-gout\/pages\/fr\/accueil_4.htm#.Ud7qRPn0F8F\" target=\"_blank\">sites remarkable du go\u00fbt<\/a>,<\/i><i>\u00a0<\/i>by the National Council of culinary arts.<\/p>\n<p>As the garden is tucked away behind the palace and is not part of the standard chateau\u00a0tour, most visitors don&#8217;t know it is there. It is open from April to October and guided tours are available in English.
