The French value taste over the consequences of consuming high levels of saturated fat. Australians accept a less satisfying, palatable experience for a corresponding reduction in harmful fats and calories.\u00a0 Is one right and the other wrong?<\/strong><\/p>\n<p><img decoding=\"async\" class=\"lazyload size-full wp-image-98725 aligncenter\" src=\"http:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/mounds-of-bordier-butter.jpg\" data-orig-src=\"http:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/mounds-of-bordier-butter.jpg\" alt=\"\" width=\"360\" height=\"450\" srcset=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27360%27%20height%3D%27450%27%20viewBox%3D%270%200%20360%20450%27%3E%3Crect%20width%3D%27360%27%20height%3D%27450%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-srcset=\"https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/mounds-of-bordier-butter-200x250.jpg 200w, https:\/\/theproject.com.au\/myfrenchlife\/wp-content\/uploads\/mounds-of-bordier-butter.jpg 360w\" data-sizes=\"auto\" data-orig-sizes=\"(max-width: 360px) 100vw, 360px\" \/><\/p>\n<p>For years people have talked of the <a href=\"http:\/\/en.wikipedia.org\/wiki\/French_paradox\" target=\"_blank\" rel=\"noopener\">French paradox<\/a>, a phrase that describes the apparent mismatch between the French diet and their national health statistics. Consider this: Australia has 24.6 percent obesity versus just eleven percent in France according to the latest study by the OECD.\u00b9 And yet the French eat butter \u2013 surely these two facts are incompatible?<\/p>\n<h2>Supermarket stocks reflect national preferences<\/h2>\n<p>There are <strong>twice as many variations of butter<\/strong> available in supermarkets in <strong>France<\/strong> than in Australia and far more brand choice. Conversely, margarine occupies far less shelf space in <em>Monoprix<\/em> throughout France, than it does in Woolworths in Australia. The irony here is that it was in fact a Frenchman who invented margarine.<\/p>\n<blockquote><p>&#8220;[In] the 1860s, butter had become so in demand in France that Emperor <a title=\"Napoleon III of France\" href=\"http:\/\/en.wikipedia.org\/wiki\/Napoleon_III_of_France\" target=\"_blank\" rel=\"noopener\">Napoleon III<\/a> offered prize money for an inexpensive substitute to supplement France&#8217;s inadequate butter supplies. A <a title=\"Hippolyte M\u00e8ge-Mouri\u00e9s\" href=\"http:\/\/en.wikipedia.org\/wiki\/Hippolyte_M\u00e8ge-Mouri\u00e9s\" target=\"_blank\" rel=\"noopener\">French chemist<\/a> claimed the prize with the invention of <a title=\"Margarine\" href=\"http:\/\/en.wikipedia.org\/wiki\/Margarine\" target=\"_blank\" rel=\"noopener\">margarine<\/a> in 1869. The first margarine was beef <a href=\"http:\/\/en.wikipedia.org\/wiki\/Tallow\" target=\"_blank\" rel=\"noopener\">tallow<\/a>\u00a0flavoured with milk and worked like butter; vegetable margarine followed after the development of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Hydrogenation\" target=\"_blank\" rel=\"noopener\">hydrogenated<\/a>\u00a0oils around 1900.&#8221;\u00b2<\/p><\/blockquote>\n<h2>Why do Australians avoid butter?<\/h2>\n<p>Australians\u2019 aversion to butter may be largely influenced by extensive national health promotion activity. The strength of these campaigns lies in the fact that they are undertaken not only by <a href=\"http:\/\/www.au-flora.com\/Flora\/Default.aspx\" target=\"_blank\" rel=\"noopener\">margarine producers<\/a>, but also by independent bodies such as the <a href=\"http:\/\/www.betterhealth.vic.gov.au\/bhcv2\/bhcarticles.nsf\/pages\/fats_butter_or_margarine?open\" target=\"_blank\" rel=\"noopener\">Victorian State Government <\/a>and the <a href=\"http:\/\/www.heartfoundation.org.au\/healthy-eating\/fats\/Pages\/butter-margarine.aspx\" target=\"_blank\" rel=\"noopener\">Heart Foundation<\/a>. They encourage Australians to choose margarine over butter citing high cholesterol levels and obesity as the major risk factors associated with a high-fat diet.<\/p>\n<p>But have these health campaigns only succeeded in making Australians apprehensive about eating real, natural food? Fear of fat has us reaching for over-processed products that are manufactured in laboratories rather than grown in fields.<\/p>\n<p>Nutritionist Joan Gussow\u00a0echoes this sentiment: \u201cAs for butter vs margarine, I trust\u00a0cows more than chemists.\u201d\u00b3<\/p>\n<p style=\"text-align: left;\"><strong>And so do the French, it seems!<\/strong><\/p>\n<div class=\"video-shortcode\"><iframe title=\"How One of France&#039;s Oldest Butter Producers Makes 380 Tons Per Year\u2014 Vendors\" width=\"1200\" height=\"675\" src=\"https:\/\/www.youtube.com\/embed\/b--l_0eMbo8?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/div>\n<h2>Consequences of focusing on fat<\/h2>\n<p>According to the Dietary Guidelines for Australians\u00a0from as young as the age of two it is preferable for Australians to consume low-fat dairy products in order to limit their overall saturated fat intake.? But have we taken things too far?<\/p>\n<p>Following this guideline to the letter results in Australian consumers focusing on reducing fat to the exclusion of everything else?.<span style=\"color: #000000;\">\u00a0<\/span>The issue here is that by removing most of the fat, processed products suffer a loss of <a href=\"http:\/\/www.foodsafety.edu.au\/news\/2011\/03\/low-fat-or-not\/\" target=\"_blank\" rel=\"noopener\">flavour and mouth feel<\/a>.\u00a0 Sugar or salt is often added to compensate for this, and can dramatically reduce the overall healthiness of the product.<\/p>\n<p>In addition to this, eating a product labeled low or no-fat often makes people think they can eat more.<\/p>\n<p>&#8220;People feel virtuous.
